When a user adds instant coffee to water, the visible process is the powder disappearing, but behind that are several sequential steps: water wets the surface, penetrates the particle structure, dissolves the solids, and carries them out of the particle. So solubility or reconstitution speed doesn't depend only on whether the substance is soluble in water. The physical structure of the particle plays an equally important role.
Water temperature and particle size affect dissolution rate
Viewed as this sequence, water temperature affects only part of the process. To explain reconstitution rate, you need to look simultaneously at whether water can reach the particle and how long the internal path is.
Water temperature usually increases dissolution rate because water's viscosity decreases and mass transfer happens faster. However, the magnitude of effect isn't the same for every product. A particle with porous structure and good water-permeability can reconstitute faster at lower temperature than a dense or deformed particle.
Particle size affects surface area and the distance water must travel into the material. Small particles have large specific surface area, but if too small, they can form a hard-to-wet surface layer or float on water, slowing actual wetting. Conversely, large particles can have a structure favorable for water flow if the interior is porous enough.

Particle structure and wettability create the big difference
Internal structure is the linking variable between particle size and reconstitution speed. Research on spray-freeze-dried instant coffee shows porous-structure products exhibit instant solubility. Freeze-drying research also shows pore size depends on freezing conditions and can affect dissolution kinetics.
Designing measurements to separate the effect of each variable
To study the effect of temperature and size, you need an experimental design that separates the two variables. You can select several particle-size grades and multiple water temperatures, then measure reconstitution time, remaining solid amount, and solution homogeneity. If observing by eye alone, it's hard to distinguish real dissolution from particle sinking, breaking, or floating.
Water amount also needs to be controlled. The same powder amount but different water volume creates different final concentration and affects dissolution dynamics. Stirring method, cup shape, and start-of-measurement timing must also be standardized. If these variables change, results that seem like a temperature effect may actually come from the brewing setup.
A good measurement system can combine reconstitution time with photography or sensors for turbidity, conductivity, or remaining solids, depending on the purpose. More important is predefining what counts as fully reconstituted. This is necessary if you want to compare between formulas or drying methods.
So water temperature and particle size are just two parts of the problem. Reconstitution speed is the result of interaction between temperature, surface area, wettability, and porous structure. When developing instant coffee, you should optimize both particle characteristics and usage conditions rather than trying to solve the problem by raising water temperature alone.
Usage conditions need to be included in the evaluation criteria
Solubility also depends on wettability. A particle may contain very soluble material, but if the surface is hydrophobic or gas is trapped in the pores, water still has trouble entering. So the time a particle takes to disappear on the water's surface doesn't fully reflect the molecular-level dissolution rate.
The structure created by the drying process determines many of these characteristics. Freeze-drying can create a pore network left by ice crystals, while spray-drying forms particles from liquid droplets and forms a shell through a different mechanism. Two powders with the same moisture and same average size can still have different reconstitution curves.
If the goal is a product brewed with room-temperature water, the test must use that exact condition. A product that only dissolves very quickly in hot water can't be called good at reconstitution under every condition. Usage temperature needs to be determined from the actual application case.
When optimizing, reconstitution time should be treated as a response rather than an input variable. Input factors include particle size, structure, moisture, and water conditions. Experimental design helps determine the interaction between them, avoiding the trap of raising water temperature just to mask a structural problem in the powder.
When designing the experiment, particle size should be described by a distribution rather than just an average size. Two samples with the same average diameter, but one with a larger fine-particle fraction, can have different wetting behavior.
Some notes when reading the data
Stirring method also needs to be controlled. Vigorous stirring can break up clumps and shorten reconstitution time, while a user might only stir lightly or not at all. The solubility standard needs to reflect the intended usage condition.
