For liquid concentrated-coffee products, microbiology is a different layer of risk from aroma decline. Good control must start from product characteristics and end at actual storage conditions.
Microbiological stability is its own problem
Liquid concentrated coffee has a different environment from dry powder, so microbiological risk needs separate assessment. A product with good sensory quality can't automatically be considered safe. Research on long-term concentrated-coffee storage tracked microbiology in parallel with chemistry and sensory evaluation.
Microbiological stability must be determined by target microbial groups and conditions of use. You shouldn't use a single indicator to conclude the product's entire safety status.

pH, water, and temperature jointly determine risk
pH, water activity, temperature, and solute composition all affect microbial survival or growth ability. High Brix isn't the sole evidence of safety since two products with the same solids can have different pH and environment.
So risk assessment must start from the formula and actual storage conditions. If the product is opened multiple times, post-opening conditions also need separating from the intact-package state.
Heat treatment must be validated
Pasteurization or heat treatment can reduce microbial load, but effectiveness depends on temperature, time, and heat-transfer ability. Cold spots or unsuitable residence-time distribution can make actual conditions differ from nominal conditions.
So you shouldn't rely only on the temperature set on the equipment. You need validation data showing the product actually received the defined treatment level throughout the process.
Risk of recontamination after treatment
After heat treatment, the product can still be recontaminated from pipes, valves, filling heads, or packaging. Equipment cleanliness and product-line design are therefore part of microbiological control.
A good system must view treatment, transfer, and packaging as one continuous chain. If only the heating step is controlled while the downstream portion is ignored, the actual level of protection can be lower than expected.
Designing the testing program
The testing program should be based on risk and product goals. You can track aerobic microorganisms, yeasts, molds, and suitable indicator groups. Research on concentrated coffee has used periodic counts for control during storage.
Sampling frequency needs to be enough to detect trends and must come with controlled sample-storage conditions. A negative result at one point in time can't substitute for assessing the entire storage period.
Don't transfer results between formulas mechanically
Changing pH, solids, preservatives, packaging, or thermal process can all change microbial behavior. So data for one product is only reference evidence for another.
When an important variable changes, the validation program needs reviewing. This is especially necessary if the goal is extending shelf life or moving from refrigerated to ambient storage.
A trustworthy microbiological-control program must start from process design and hygiene, then use testing to confirm the control measures are working.
In microbiological evaluation, sampling and sample-transport conditions also need controlling. If a sample is held at an unsuitable temperature before analysis, the result may not reflect the product's state at sampling time. This is why the testing procedure must also specify sample handling. Post-opening product also needs its own assessment.
If the goal is establishing shelf life, microbiological results need to be read alongside storage temperature and packaging condition. A sealed sample at controlled temperature doesn't represent an opened product left in a fluctuating environment. So test conditions must accurately describe how the product will be used. When changes occur, validation needs revisiting.
