An electronic tongue doesn't “taste” coffee in the biological sense. The system uses an array of sensors to record the electrochemical response of a sample, then converts the signals into analyzable data. For coffee concentrate, this approach is notable because the product contains many dissolved compounds capable of creating rich electrochemical signals.
Where the electrochemical signal comes from
An electronic tongue usually gives multidimensional data. A single sensor is hard to use as a stand-in for one basic taste, so analysis models usually use the whole or part of the signal vector. Preprocessing, normalization, and variable selection can significantly affect classification results.
Concentrate samples need to be standardized for concentration, temperature, and viscosity before entering the sensor system. If one sample is thicker than another, the sensor may respond to that physical difference instead of the chemical difference the study is looking for.
The real value of an electronic tongue lies in its ability for fast screening and generating supplementary quantitative data. Results should be cross-checked against chemical analysis or sensory evaluation to determine what attribute the sensor signal actually reflects.
An electronic tongue has potential to become a rapid-screening tool, but its discriminative value is only trustworthy once the model is validated on new samples. If the training set is too narrow, the system may recognize the batch or test condition instead of recognizing the concentrate's actual characteristics.

Standardizing concentrate before measurement
For an electronic tongue, the multi-sensor signal should be seen as a data space. The goal of distinguishing concentrates becomes reliable when the model still correctly identifies new samples rather than just reproducing the training dataset well. A small change in concentration or temperature can shift the signal within that space, so measurement conditions need standardizing before drawing conclusions about the product.
For an electronic tongue to have value for concentrate, the calibration step must be taken seriously. Reference samples need to cover the variation range the system will encounter in production; if only a few very similar samples are used, the model may not recognize a meaningful change when it appears in real production.
An electronic tongue used in a factory also needs a cleaning program and sensor-drift checks. A signal changing over time could originate from the sensor surface rather than the product. Reference or control samples help detect this issue before it affects the model.

How a classification model needs to be challenged
General literature on electrochemical sensors and food classification.
In essence, an electronic tongue creates a signal vector rather than a single “bitter” or “sour” value. Different sensors have different sensitivity to components in the sample, and it's the combined signal that's used to distinguish. This makes data processing an important step, not just running raw signals through an algorithm.
Concentrate is especially sensitive to sample conditions. Solute concentration, temperature, and viscosity can affect contact between the sample and the sensor. If two samples are introduced into the system under different physical conditions, the model may learn that difference instead of learning a genuine chemical difference.
A classification model needs testing on samples it has never seen. Randomly splitting multiple repeated measurements of the same sample into both training and test sets can create artificially inflated accuracy. A stricter approach is holding out entire batches for final testing.
The real-world role of an electronic tongue
Sensor stability also needs monitoring. Electrode surfaces change over time, dirt can accumulate, or an inconsistent cleaning procedure can cause signal drift. A reference sample measured repeatedly by shift helps detect this phenomenon.
An electronic tongue is best suited as a screening or supplementary tool. If the model detects a concentrate deviating from the normal group, the next step can be chemical or sensory analysis to find the cause. This usage is more realistic than treating the sensor as a full substitute for confirmatory methods.
To avoid the model learning the wrong measurement condition, the dataset should contain standardized samples along with a portion of deliberate variation. For example, you can test the effect of concentration within a small range and see whether the model still correctly identifies the concentrate group. This approach helps assess robustness before deployment.
In batch-control applications, analysis speed is an advantage but can't be traded for reliability. A fast electronic-tongue measurement only has real value when calibration, sensor cleaning, and data processing stay stable from day to day.
