Dose and Beverage Yield Form a Specific Ratio

In espresso, three numbers commonly appear together: the dry coffee dose, the beverage mass in the cup and extraction time. Beverage ratio can be described by dividing beverage mass by coffee dose. For example, 18 grams of coffee producing 36 grams of beverage gives a ratio of 2.

That ratio describes the recipe, but it does not decide quality on its own. Two shots can have the same ratio and still differ because grind size, temperature, pressure, puck preparation and flow are different.

Time Is a Flow Variable, Not a Destination

Extraction time tells us how long the process lasted, but it should not be used as a stand-alone quality score. A long shot may be caused by grind, puck structure or flow restriction; a short shot may have a different cause. Training material from the Specialty Coffee Association places dose, distribution, tamping, grinding and extraction within one connected system.

If a shot reaches a familiar number of seconds but tastes wrong, the number should not be protected simply because it looks correct. Read time together with dose, yield and the actual flow.

Record Three Variables Instead of Relying on Memory

A practical log records coffee dose, beverage yield and time for every shot. If possible, add a short description of the flow. TDS or extraction yield can provide additional information when suitable equipment is available, but the three basic measurements already make machine adjustment more orderly.

If dose and yield remain stable while time changes substantially, grind size or puck preparation deserves attention. If time remains stable while the cup changes, other variables may be responsible. The point is to create enough information to decide what to change next.

Refine the Recipe Around the Drink You Want

Instead of forcing every shot toward the same time, define the intended drink first. If the ratio is working but the flow needs to change, grind size may be the appropriate variable. If the goal is a different beverage strength or yield, ratio may be the more relevant adjustment.

Change one variable deliberately, record the result and only then decide the next step. A reliable shot is not identified by one number. Dose, yield, time and flow become meaningful when they are interpreted together and adjusted according to the intended cup.

The same three numbers can also reveal different kinds of instability. If dose and yield are held constant but time changes substantially, the first checks may concern grind and puck preparation. If dose stays constant while yield changes, the recipe itself has changed even if the timer looks familiar. If the numbers are stable but the cup changes, attention may need to move toward coffee condition, water or other process variables.

For example, an 18-gram dose producing 36 grams of beverage describes a 1:2 relationship. Changing the yield to 30 grams produces a different ratio even if the dose remains 18 grams. The ratio is therefore a bridge between what goes into the basket and what comes out of the cup. It does not replace time, and it does not tell the brewer whether the shot tastes appropriate.

Logging these values over multiple shots is more useful than memorizing them. A brewer can look back and see whether a recurring flow change is associated with a particular grind setting, preparation routine or recipe adjustment. That record turns dialing in from a sequence of guesses into a series of decisions supported by observations.

Looking at all three values together also prevents a common misunderstanding about “dialing in.” The objective is not to make dose, yield and time match a template that is correct for every coffee. The objective is to establish a relationship that produces the intended drink and can be reproduced with the equipment being used. Different coffees and different workflows can reasonably settle at different combinations.

When a shot changes, the brewer can first record what changed before touching the grinder or recipe. If the beverage yield is reached much earlier than usual, that observation points toward a different problem from one in which the same yield takes longer. If the dose has drifted, that needs to be corrected before a time comparison is meaningful. This simple order of operations keeps the diagnosis anchored in measurable facts.

Over time, a small record of dose, yield and time becomes more useful than a single remembered target. It allows the brewer to recognize normal variation, spot recurring changes and decide which variable deserves the next controlled adjustment.

A useful record can also include the coffee name and grinder setting so that the three core numbers remain attached to their context. Without that context, a ratio or time target can be copied too literally. With it, the numbers become part of a reproducible description of one brewing system.

The broader lesson is that espresso recipes are relationships rather than isolated targets. Dose, yield and time describe what happened, but the brewer still has to connect those measurements to flow and taste. When the variables are recorded together, adjustments become smaller, clearer and easier to repeat.
