A warehouse is more than just a place to stack sacks
Warehouse conditions determine the environment coffee has to endure for the entire storage period. For green coffee, moisture and exposure to odor, insects, or outside material are the main concerns. For roasted coffee, oxygen, temperature, light, and humidity can all affect how fast quality declines.
Moisture and water
Green beans are able to exchange moisture with their surroundings. The FAO recommends storing coffee in dry, clean conditions and avoiding sources that raise humidity. Water getting into the warehouse, damp flooring, or temperature swings that cause condensation can all create unfavorable conditions. For roasted coffee, moisture also changes the product's state and can reduce its stability during storage.

Temperature, light, and air
High temperatures can accelerate a number of reactions that degrade quality during storage. Light is another factor worth controlling, especially when the packaging doesn't block it well enough. For roasted coffee, the amount of oxygen the product is exposed to relates directly to oxidation and aroma loss.
Odor, insects, and hygiene
A coffee warehouse should be kept clean and shouldn't share space with strong odor sources. Pest control needs to be organized in a way that doesn't introduce additional risk to the product. Cleaning the floors, shelving, receiving area, and waste-handling zone helps reduce sources of contamination.

Monitoring and record-keeping
A well-controlled warehouse needs a way to track the conditions that matter, rather than only checking when something goes wrong. Temperature, ambient humidity, the condition of the sacks, and any anomalies can all be logged. This data helps spot trends and trace back the conditions a particular batch experienced when quality changes.
