Temperature isn't just about how hot or cool a warehouse feels

For coffee, temperature is a variable that can change the rate of chemical and physical processes during storage. Two batches of the same type in the same packaging, stored at different temperatures, don't necessarily age at the same speed.

Research on roasted coffee shows higher storage temperature increases the rate of CO2 generation and speeds up oxidation. Another study on Thai Arabica roasted coffee also found high temperature shortened stability and altered the volatile-compound profile.

High temperature usually speeds up decline

As temperature rises, many chemical reactions happen faster. For roasted coffee, processes related to oxidation, changes in volatile compounds, and sensory-quality loss can all be accelerated.

Research on ground-roasted-coffee shelf life shows a 10°C increase significantly raises the rate of decline under test conditions. A 2025 study also found samples stored at higher temperatures had shorter stability periods.

That said, lab figures shouldn't be directly turned into an absolute “safe temperature” for every product. Packaging conditions, coffee form, and desired shelf life all play a role.

Temperature fluctuation is also worth watching

It's not just average temperature that matters — swings between day and night, or across different legs of transport, can also change conditions inside the bag. As temperature shifts, pressure and moisture balance within the system can change too.

For green coffee, storage and transport research notes that temperature and relative-humidity fluctuations can change moisture content, water activity, and sensory characteristics. This shows temperature control needs to be viewed alongside humidity, rather than relying on a single thermometer in the warehouse.

A warehouse with a moderate average temperature but large swings still needs monitoring to understand what's actually happening to the product.

Temperature control needs to be tied to the actual product

There's no single number that suits every type of coffee, every packaging, and every intended shelf life. What matters is knowing the actual conditions the product is stored under and how quality changes over time.

Temperature can be tracked alongside humidity, storage duration, packaging type, and relevant quality indicators. With continuous data, a facility can identify the times or locations where quality declines faster.

Good temperature management, then, isn't just about setting a limit. It's about creating a stable environment and having data to show exactly how the product was stored.
