In an instant-coffee line, solid recovery is a direct way of looking at the amount of dry matter transferred from roasted-ground coffee into the extract. This indicator matters because coffee raw material is a major cost component of the process, but it shouldn't be equated with extract concentration. A high-concentration extract can be produced from little water rather than from genuinely high recovery.
On what basis should solid recovery be calculated?
In principle, you need to track a mass balance. The mass of solids in the raw material, the amount of solids in the extract, and the remainder left in the spent grounds all need to be converted to the same dry basis. Doing so turns solid recovery into an indicator of how thoroughly the raw material was exploited. Research on pressure-cycling extraction used the amount of dissolved matter obtained relative to raw material as the basis for comparison.

From solid recovery to process cost
A recovery number only becomes economically meaningful once placed alongside the resources spent obtaining it. From here, the question shifts from “how much was recovered” to “how much more recovery is still worth it.”
Economic meaning appears when the recovery figure is linked to cost. Increasing temperature or pressure can help extract more solids but also increases energy demand, equipment requirements, and the risk of affecting aroma components. Extending the cycle also has its cost: equipment is occupied longer, more water needs treating, and hourly capacity decreases.
Another issue is that not all recovered solids carry equal value. Coffee extract contains many different compound groups, and their proportions shift with roast level and extraction conditions. If the increase in recovery mainly comes from components that create harsh, bitter, or poorly suited flavor profiles, the value of that added portion may be low. Conversely, a recovery process that maintains a favorable compound ratio while still increasing yield creates more genuine value.
Is recovered solid matter equally valuable?
Solid recovery also needs to be placed within the downstream chain. The extract is usually concentrated and then dried afterward. If increasing solids by changing extraction conditions makes the extract harder to concentrate, changes its viscosity, or creates a greater heat load, the cost can simply shift from the extraction step to a later step. So optimizing a single piece of equipment in isolation can easily lead to a locally optimal but globally suboptimal result.
Why look at solid recovery across the whole line?
A useful evaluation method is building a marginal-benefit curve. At each condition level, record solid recovery, cycle time, energy, water, quality indicators, and throughput. When the additional recovery becomes small relative to the additional cost, that region may no longer be attractive. This method fits production thinking better than setting a single fixed recovery target.
In research and production control, solid recovery should come with a clearly defined mass-balance system. You need to define the calculation basis, the method for determining solids, raw-material moisture, and sample-handling method. Only once these conditions are stable does comparing between batches, equipment, or formulas become meaningful. A nice-looking recovery number calculated on an inconsistent basis can mislead decisions.
Indicators that help read economic effectiveness more accurately
The economic value of solid recovery, then, lies in the useful portion of solids obtained at a reasonable consumption level. This indicator connects raw material to line efficiency, but only becomes meaningful when read alongside extract quality, energy, time, and throughput. In an instant-coffee line, the important question isn't just how much is recovered, but at what cost and with what resulting quality.
Another useful indicator is solids recovered per unit of time. Two processes can achieve the same solid recovery, but one finishes much faster. When equipment capacity is the constraint, throughput per unit time can matter more than a few percentage points of recovery. This is especially clear when a system needs to process many batches within a given period.
You also need to distinguish whole-line solid recovery from single-step recovery. If the extract is filtered, concentrated, and dried after extraction, part of the solids can be lost at each step. A stage-by-stage mass-balance table helps identify where the biggest losses occur. If you only take the input raw material and the final powder as the two measurement points, the cause of loss gets obscured.
Some notes when reading the data
When assessing economics, the additional solids recovered should be converted into product value or real benefit. If the increase raises processing cost or lowers sensory value, the net benefit can be lower than the recovery figure suggests. This way of calculating helps avoid decisions based on a single KPI and fits better with whole-line optimization.
